1 Algerian Shakshouka Recipe

A simple, traditional Algerian summer dish made with poached eggs, sweet bell peppers, and ripe tomatoes cooked in extra virgin olive oil.

3 tbsp extra virgin olive oil 1 large yellow onion (thinly sliced) 2 green bell peppers (sliced into thin strips) 1 red bell pepper (sliced into thin strips) 4 large fresh tomatoes (peeled and finely chopped) 4 fresh garlic cloves (minced) 4 to 5 large fresh eggs 1 tsp sweet paprika ½ tsp ground cumin Sea salt and black pepper (to taste) Freshly chopped parsley (for garnish)

Method
 

  1. Sauté the Vegetables: Heat the extra virgin olive oil in a wide skillet over medium heat. Add the sliced onions and bell peppers. Cook for 10 minutes until soft and caramelized.
  2. Make the Sauce: Add minced garlic and cook for 1 minute until fragrant. Stir in chopped tomatoes, paprika, cumin, salt, and black pepper. Cover and simmer on low heat for 15 minutes.
  3. Add Eggs: Use a wooden spoon to create 4–5 small wells in the sauce. Gently crack 1 egg into each well.
  4. Poach to Perfection: Cover the skillet and cook on low heat for 5–7 minutes until the whites are set and yolks remain runny.
  5. Garnish & Serve: Sprinkle with fresh parsley and serve hot with warm homemade bread.

Bread Pairing: For the ultimate authentic experience, serve this Shakshouka hot with warm homemade Khobz Ed-Dar to dip into the rich sauce and egg yolks.
Spiced Option: If you prefer a bit of heat, add half a chopped hot chili pepper or ½ teaspoon of Harissa along with the garlic in Step 2.
Storage & Reheating: Shakshouka is best enjoyed fresh. However, you can make the tomato and pepper sauce base in advance and store it in the fridge for up to 3 days. Simply reheat the sauce in a skillet and crack fresh eggs when ready to serve!
