Method
- Sauté the Vegetables: Heat the extra virgin olive oil in a wide skillet over medium heat. Add the sliced onions and bell peppers. Cook for 10 minutes until soft and caramelized.
- Make the Sauce: Add minced garlic and cook for 1 minute until fragrant. Stir in chopped tomatoes, paprika, cumin, salt, and black pepper. Cover and simmer on low heat for 15 minutes.
- Add Eggs: Use a wooden spoon to create 4–5 small wells in the sauce. Gently crack 1 egg into each well.
- Poach to Perfection: Cover the skillet and cook on low heat for 5–7 minutes until the whites are set and yolks remain runny.
- Garnish & Serve: Sprinkle with fresh parsley and serve hot with warm homemade bread.

Spiced Option: If you prefer a bit of heat, add half a chopped hot chili pepper or ½ teaspoon of Harissa along with the garlic in Step 2.
Storage & Reheating: Shakshouka is best enjoyed fresh. However, you can make the tomato and pepper sauce base in advance and store it in the fridge for up to 3 days. Simply reheat the sauce in a skillet and crack fresh eggs when ready to serve!
