Method
1. Activating the Yeast In a small bowl, combine the warm milk, sugar, and active dry yeast. Stir gently and let it sit for about 5 to 10 minutes until it becomes frothy and bubbly. 2. Mixing the Dough In a large mixing bowl or the bowl of a stand mixer, combine the fine semolina, flour, salt, nigella seeds, and sesame seeds. Make a well in the center and pour in the yeast mixture, one egg, and the orange blossom water. Begin mixing on low speed until a shaggy dough starts to form. 3. Kneading and Adding Butter Knead the dough for about 8 to 10 minutes (or 5 minutes in a stand mixer) until it becomes smooth and elastic. Gradually add the softened butter, one tablespoon at a time, kneading continuously. The dough will become very soft and slightly sticky, which is exactly what you want for a super fluffy bread. 4. The First Rise Shape the dough into a smooth ball, place it in a lightly oiled bowl, and cover it with a damp cloth or plastic wrap. Let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size. 5. Shaping and the Second Rise Gently deflate the dough. Grease a round baking pan (about 30cm in diameter) with butter or line it with parchment paper. Transfer the dough to the pan and gently pat it down with your hands to cover the entire surface, keeping the thickness even. Cover and let it rise again for 20 to 30 minutes. 6. Baking to Golden Perfection Preheat your oven to 200°C (390°F). Gently brush the top of the risen dough with the beaten egg wash and sprinkle a few extra nigella and sesame seeds on top. Bake for 20 to 25 minutes until the crust is beautifully golden brown.
