Authentic Algerian Brioche Recipe

Ingredients
  

  • 500 g all-purpose flour
  • 1 tbsp active dry yeast
  • 100 g granulated sugar
  • 120 ml vegetable oil
  • 2 eggs 1 for dough, 1 for wash
  • 60 ml warm orange blossom water
  • 240 ml warm milk
  • 1 tsp salt
  • 1 tbsp nigella seeds
  • 1 tbsp toasted sesame seeds
  • Zest of 1 lemon

Method
 

  1. Mix warm milk, yeast, and 1 tbsp sugar; let rest for 10 minutes until foamy.
  2. Combine flour, remaining sugar, salt, seeds, and lemon zest in a large bowl.
  3. Add egg, oil, orange blossom water, and yeast mixture. Knead for 10 minutes until smooth.
  4. Cover and proof in a warm spot for 60 minutes until doubled in size.
  5. Shape into rounds or loaves on a baking sheet and proof for another 30 minutes.
  6. Brush with egg wash mixed with orange blossom water and sprinkle with seeds.
  7. Bake at 180°C (350°F) for 20-25 minutes until golden brown.

Notes

Keep the dough soft and slightly sticky during kneading; adding too much extra flour will make the brioche dense rather than airy.
Store in an airtight container for up to 3 days, or freeze the baked loaves for up to 1 month.
