Authentic Algerian Chtitha Batata

A traditional Algerian potato dish cooked in a fragrant garlic, cumin, and paprika Dersa sauce.

Ingredients
  

  • 1 kg potatoes peeled and cubed
  • 6 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp sweet paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder or Harissa to taste
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1.5 cups warm water
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

  1. In a bowl, mix minced garlic, paprika, cumin, chili powder, salt, black pepper, and 1 tbsp olive oil to make the Dersa paste.
  2. Heat remaining olive oil in a pot over medium heat, add Dersa and tomato paste, and sauté for 1-2 minutes.
  3. Add potato cubes and toss until fully coated in spices for 3 minutes.
  4. Pour in warm water, cover, and simmer on medium-low heat for 20-25 minutes until tender and sauce thickens.
  5. Sprinkle with fresh cilantro and serve hot with traditional bread.

Notes

You can add a beaten egg over the hot potatoes right after turning off the stove for a richer gravy.
