Authentic Algerian Croquet (Marble Tea Biscuits)

Ingredients
  

  • 3 large eggs
  • 1 cup 200g granulated sugar
  • 1 cup 240ml vegetable oil
  • 1 tbsp vanilla extract & zest of 1 lemon
  • 1 tbsp baking powder 10g
  • 4 cups 500g all-purpose flour (approx.)
  • 2 tbsp unsweetened cocoa powder
  • 1 egg yolk + 1/2 tsp instant coffee for egg wash

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Whisk eggs, sugar, and vanilla until pale. Gradually pour in oil while whisking.
  3. Stir in lemon zest, baking powder, and flour gradually until a soft dough forms.
  4. Divide dough: knead cocoa powder into one half. Layer plain and cocoa dough together to form 2 long logs.
  5. Flatten logs slightly, brush with egg wash, and score wavy lines on top using a fork.
  6. Bake for 20-25 minutes until golden. Cool 5 minutes, then slice diagonally.

Notes

Do not over-bake the logs during the initial stage to ensure they slice cleanly without crumbling. Store in a glass jar or tin container to keep them crunchy for up to two weeks.
