Authentic Algerian Dobara Recipe

A famous fiery Saharan chickpea and fava bean soup originating from the palm oasis city of Biskra. 100% vegan, packed with garlic, cumin, harissa, and olive oil.

Ingredients
  

  • 2 cups dried chickpeas soaked overnight
  • 4 cloves garlic minced
  • 2 large ripe tomatoes finely diced
  • 2 green hot chilies chopped
  • 1 tbsp Algerian Harissa paste
  • 1 tbsp ground cumin
  • 1/2 cup fresh coriander chopped
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt to taste

Method
 

  1. Drain the soaked chickpeas, transfer to a pot with fresh water and 1 tsp cumin, and boil until soft (about 60 mins).
  2. In a large bowl, mix minced garlic, diced tomatoes, chopped chilies, harissa, ground cumin, chopped coriander, and salt.
  3. Ladle hot boiled chickpeas along with some warm broth directly into the seasoning mixture and mix gently.
  4. Drizzle generously with extra virgin olive oil and fresh lemon juice. Serve hot with warm bread.

Notes

Note: Originated in Biskra, southeastern Algeria. Always serve piping hot with traditional bread.
