2 cups (250g) fine chickpea flour (sifted) 4 cups water 1 cup whole milk ½ cup vegetable oil 1 large egg 1½ tbsp ground cumin (divided) 1 tsp sea salt ½ tsp black pepper Harissa paste (for serving)

Method
 

  1. In a large mixing bowl, whisk together the sifted chickpea flour, water, whole milk, vegetable oil, egg, ground cumin, and sea salt. Whisk vigorously for two minutes until no lumps remain (the batter will be very thin).
  2. Let the prepared batter sit at room temperature for 15 to 20 minutes to allow the chickpea flour to absorb the liquids.
  3. Preheat your oven to 200°C (400°F). Grease a deep baking dish with oil.
  4. Pour the rested mixture into the baking dish and bake for 30 minutes until the edges are set.
  5. Turn on the top broiler for 5 minutes until the top turns golden brown with rustic dark spots.
  6. Serve hot, sliced inside a fresh French baguette, and sprinkle with extra cumin and harissa paste.
