  • 1 tsp Arise Seeds Habat El Halwa

  • Warm water as needed for soft dough

  • Nigella and Sesame Seeds for sprinkling

Method
 

  1. Mix Dry Ingredients: In a large bowl or stand mixer, combine fine semolina, flour, instant yeast, sugar, salt, nigella seeds, and anise seeds.
  2. Incorporate Wet Ingredients: Add the whole egg, melted butter (or oil), and warm milk to the dry mixture. Mix well to form a shaggy dough.
  3. Knead until Soft: Gradually add warm water while kneading for 8-10 minutes until the dough becomes soft, elastic, and slightly sticky.
  4. First Rise & Shape: Divide the dough into two equal portions. Place them onto oiled round baking trays and gently press them down into round flat discs (about 2 cm thick).
  5. Proof, Wash & Bake: Cover and let rise in a warm spot for 35-45 minutes until doubled in size. Brush gently with egg wash, sprinkle with extra nigella and sesame seeds, and bake in a preheated oven at 200°C (390°F) for 20-25 minutes until deep golden brown.
