Authentic Algerian Maakouda Recipe

Ingredients
  

  • 1 kg 2.2 lbs starchy potatoes (boiling potatoes)
  • 3 cloves garlic finely grated
  • 1/2 cup fresh flat-leaf parsley finely chopped
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 tsp salt or to taste
  • 1/4 tsp black pepper
  • 2 large egg yolks
  • 1/2 cup all-purpose flour for dredging
  • Vegetable oil for shallow frying
  • Lemon wedges for serving

Method
 

  1. ​Boil Potatoes: Place whole potatoes (with skins on) in a large pot of salted water. Boil until soft when pierced with a fork (approx. 25 minutes). Drain, let cool slightly, peel off skins, and mash thoroughly until smooth.
  2. ​Season & Mix: Add grated garlic, chopped parsley, cumin, turmeric, salt, black pepper, and egg yolks to the mashed potatoes. Mix well until completely combined.
  3. ​Shape & Chill: Divide the potato mixture into 12 equal portions and shape them into round, flat disks. Place on a baking sheet and chill in the refrigerator for 30 minutes.
  4. ​Dredge: Lightly coat each chilled potato patty in flour, shaking off any excess.
  5. ​Fry to Golden Perfection: Heat 1/2 inch of vegetable oil in a skillet over medium-high heat. Fry patties in batches for 3–4 minutes per side until deeply golden and crispy. Drain on paper towels and serve warm with lemon wedges.
