Authentic Algerian Msemen Recipe

Ingredients
  

  • 400 g fine durum wheat semolina
  • 100 g all-purpose flour
  • 1 tsp salt
  • Approx. 300ml lukewarm water
  • 1/2 cup vegetable oil for stretching
  • 1/4 cup melted butter or ghee Smen
  • Warm honey for serving

Method
 

  1. Combine semolina, flour, and salt in a bowl; add water gradually and knead for 12-15 minutes until elastic.
  2. Divide dough into 8 equal balls, brush with oil, cover, and rest for 30 minutes.
  3. Oil your work surface, then stretch each dough ball into a paper-thin translucent circle.
  4. Drizzle with oil/butter, fold into thirds vertically, then horizontally to form a square pocket.
  5. Cook on a hot medium-heat skillet for 2-3 minutes per side until golden brown and puffed.
  6. Serve warm drizzled with honey and fresh mint tea.

Note: For extra flakiness, sprinkle a tiny pinch of fine semolina over the oiled dough before folding.
