Ingredients
  

  • 1 whole rabbit about 1.2 kg, cleaned and cut into serving pieces
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • Fresh parsley finely chopped (for garnish)

Method
 

  1. Prepare Marinate: In a large mixing bowl, combine olive oil, minced garlic, cumin, sweet paprika, ground coriander, cinnamon, lemon juice, salt, and black pepper.
  2. Marinate Rabbit: Add the rabbit pieces to the bowl and rub the marinade thoroughly into all pieces. Cover and refrigerate for at least 2 hours (or overnight).
  3. Bake: Preheat your oven to 190°C (375°F). Place the marinated rabbit pieces in a baking dish. Cover tightly with parchment paper and aluminum foil. Bake for 45 minutes.
  4. Crisp: Remove the foil and paper, then roast uncovered for an additional 15–20 minutes until the exterior is golden brown and tender.
  5. Serve: Garnish with fresh chopped parsley and serve hot with crusty bread.

Notes

Moisture Control: Covering the baking dish tightly with foil during the first 45 minutes locks in steam, keeping the lean rabbit meat tender and juicy.
Flavor Depth: For maximum flavor absorption, let the rabbit marinate in the refrigerator overnight.
Serving Suggestion: Best served hot with crusty Algerian bread (like Khobz Ed-Dar or Matlouh) to scoop up the garlic-spice pan drippings.
