Ingredients

  • 250 g Fine Semolina
  • 250 g All-Purpose Flour
  • 1.5 tbsp Active Dry Yeast
  • 1 tsp Sugar
  • 1.5 tsp Salt
  • Approx. 380ml Warm Water as needed for a soft, wet dough

Method

  1. In a small bowl, dissolve yeast and sugar in 100ml warm water. Rest for 5–10 minutes until foamy.
  2. Combine fine semolina, flour, and salt in a large bowl.
  3. Add yeast mixture and remaining warm water, mixing until a soft, sticky dough forms.
  4. Knead dough vigorously for 8–10 minutes until elastic and smooth.
  5. Divide dough into 6 equal balls and roll lightly in extra semolina.
  6. Flatten balls into 1/2-inch thick discs, cover with a towel, and let rise for 30 minutes.
  7. Pre-heat a dry skillet or tajine over medium-high heat.
  8. Cook flatbreads, flipping every 30 seconds until they puff up completely and turn golden brown. Wrap in a towel immediately to stay soft.

Notes

Notes: Keep cooked flatbreads wrapped tightly in a cloth towel to preserve softness before slicing open to fill.
