Method
- Prepare the White Sauce Base: Melt ghee and oil in a heavy-bottomed pot over medium heat. Sauté the meat chunk and grated onion until translucent. Add salt, black pepper, and cinnamon. Add pre-soaked chickpeas and 3 cups of hot water. Cover and simmer on low heat for 25 minutes.
- Prepare the Meat Mixture: In a large bowl, mix minced meat, garlic, chopped parsley, raw egg, black pepper, cinnamon, nutmeg, and salt. Knead thoroughly with your hands until smooth and cohesive.
- Form the Egg Rolls: Divide the minced meat mixture into equal portions. Flatten a portion onto parchment paper, place a peeled hard-boiled egg in the center, and wrap the meat mixture completely around it, sealing all edges.
- Simmer the Rolls: Gently place the meat rolls into the simmering sauce. Lower the heat, cover, and let cook for 25 to 30 minutes until cooked through and the sauce thickens.
- Slice and Serve: Remove rolls, let cool for 5 minutes, and slice into rounds. Arrange in a dish, pour the chickpea sauce over top, and garnish with chopped parsley.
