Ingredients
  

  • Meat Shell:
  • 1 lb 450g Lean ground beef or lamb
  • 4 Hard-boiled eggs peeled and dried
  • 1 Small yellow onion finely grated and drained
  • 1 Egg yolk
  • 1/4 tsp Ground cinnamon
  • 1/2 tsp Black pepper
  • 1/2 tsp Salt
  • 2 tbsp Fresh parsley chopped
  • Golden Sauce:
  • 1 Small yellow onion grated
  • 2 tbsp Clarified butter Smen
  • 1 Cinnamon stick
  • 1/2 Cup pre-cooked chickpeas
  • 1/2 tsp Black pepper
  • 1 tsp Salt
  • 3 Cups boiling water

Method
 

  1. Sauté grated onion in smen, add cinnamon stick, pepper, salt, chickpeas, and boiling water to make a simmering broth.
  2. Mix ground meat with grated onion, egg yolk, cinnamon, pepper, salt, and fresh parsley until smooth.
  3. Wrap equal portions of ground meat tightly around dry hard-boiled eggs to seal completely.
  4. Gently simmer the spheres in the broth on medium-low heat for 20-25 minutes.
  5. Slice in half lengthwise, arrange on a platter, spoon chickpea sauce over top, and garnish with fresh parsley.

Notes

 
Dry the boiled eggs with paper towels before wrapping so the ground meat adheres tightly.
Use a sharp knife to cut each ball in half cleanly without cracking the yolk.
