Ingredients
  

  • Aromatic Syrup & Dried Fruits:
  • 2 Cups Sugar
  • 3 Cups Water
  • 2 Cinnamon sticks
  • 1 tbsp Butter / Smen
  • 2 tbsp Orange blossom water
  • 1 Lemon slice
  • 200 g Dried prunes pre-soaked in warm water
  • 150 g Dried apricots
  • Almond Dough & Garnish:
  • 2.5 Cups Ground blanched almonds
  • 1/2 Cup Powdered sugar
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Baking powder
  • 2 Eggs beaten
  • 1 tsp Vanilla extract
  • Frying oil
  • 1 tbsp Toasted sesame seeds

Method
 

  1. ​Simmer Syrup & Fruits: In a pot, simmer sugar, water, cinnamon sticks, butter, and lemon slice for 15 minutes. Add apricots, then pre-soaked prunes, and simmer for 15 minutes until syrup thickens. Stir in orange blossom water.
  2. ​Make Almond Dough: Mix ground almonds, powdered sugar, cinnamon, and baking powder. Add vanilla and gradually stir in beaten eggs to form a soft dough.
  3. ​Shape & Fry: Shape dough into flower-shaped discs or patties. Fry in oil over medium-low heat for 2-3 minutes per side until golden brown. Drain on paper towels.
  4. ​Assemble & Serve: Transfer the sweet prunes and apricots to a serving dish, arrange the golden fried almond sfiriya on top, drizzle with warm syrup, and sprinkle with toasted sesame seeds.

Notes

Always fry over medium-low heat to ensure the almond centers cook through without burning.
Add beaten eggs gradually to keep the dough workable and easy to shape.
